Summer is here! As you head to the beach, camp, cabin, or just spend a quiet weekend at home, this crustless Quiche recipe from our friend Julie Fuller is a hit! So easy to make and freezes well ... great to keep on hand for those unexpected guests!!
Makes 2 pie pans!!
1 roll sausage (any flavor)
2 small cans Green Chili Peppers (DRAINED)
10 eggs
2 Cups Cottage Cheese
One round of Gouda cheese (I used the 8oz one)
Other random leftover cheese in your fridge
1.5 Cups Milk
4 Tbsp melted butter
1 Tbsp flour
2 pie pans
Brown sausage and drain. Equally layer sausage in pie pans. Shred gouda by hand or in food processor. Top sausage with shredded gouda. Drain chilis. Mix eggs, milk, chilis, cottage cheese, flour and butter until well blended. Measure by cup fulls and alternate filling each pan to provide equal portions. Bake at 350 for 40 minutes or til edges brown and center is set. Top with chopped green onions for serving. Or freeze for later! If frozen, best to defrost overnight and cook in the morning. Enjoy!!!
